Rasberry Pudding

To make a Rasberry Pudding
Take a Quart of Cream and boil it with whole Spice a while, then put in some grated Bread, and cover it off the Fire, that it may scald a little; then put in eight Eggs well beaten, and sweeten it with Sugar; then put in a Pint or more of whole Rasberries, and so boil it in a Cloth, and take heed you do not boil it too much, then serve it in with Wine, Butter and Sugar
You may sometimes leave out the Rasberries, and put in Cowslip Flowers, or Goosberries

  • Temperature control was difficult and therefore not specified!

  • It was assumed that the reader would already have some knowledge of cooking

  • Most Elizabethan women were unable to read!

  • The idea of a Recipe Book was an entirely new concept

  • The first Recipe Books to be printed in England which included many old Elizabethan and Medieval recipes were called:

    • 1545 - 'A Propre new booke of Cokery'

    • 1588 - 'The Good Huswifes Handmaid for Cookerie in her kitchen'

    • 1596 - 'The Good Hyswife's Jewell'

    • 1610 'Mrs. Sarah Longe her Receipt Booke'
